Lemon curd or, lemon spread.
Use this as a spread on your bread & toast or as a filling in lemon tarts.
You will not make a better tasting sweet & sour Lemon curd.

INGREDIENTS:
4 Egg Yolks,
1 cup of Sugar,
4 oz Butter (125 GRAMS),
1 tsp grated Lemon rind,
1/3 cup Lemon juice,

 

METHOD:
Separate 4 egg yolks from the egg whites,
Put the egg yolks into a pot,

We do not use the egg whites in this recipe.
We recommend you use 3 of the egg whites to make a pavlova.

Grate the zest off from one lemon.
Add 1 heaped teaspoon of the lemon zest to the pot with the 4 egg yolks.
Use just a little less lemon zest if you like yours more sweet than sour.

Add 1 cup of sugar,

We need to use a double boiler,
To make an improvised double boiler you can place one pot inside another and partially fill the bottom pot with water.

Mix the egg yolks, sugar and lemon zest together as it starts to melt in the double boiler.

Add 125 grams of butter and 1/4 of a cup of Lemon juice.

Heat and stir continually until the curd thickens.
Do not let the mix boil.

Once the curd is thickened remove from the heat & pour into small jars.
The lemon curd will thicken more as it cools.

You will have plenty of this delightfully sweet and sour treat.
