Leek, Potato and Bacon Soup.

This is such a tasty soup, a real favorite for winter months.
This Crock Pot or Slow Cooker recipe will take about 20 minutes to prepare and you can leave it cooking all day.
This is a tasty combination of leek, potato and bacon.

INGREDIENTS:

2 large Leeks,
4-6 potato,
Bacon a 1 kg packet of smoked bacon.

METHOD:
Cut your leeks in half longways down the stem & wash.
Make sure you get in between the leek leaves as this is where dirt can hide.
Once your leek is washed cut into smaller 1 inch wide pieces.

Fry the leeks in Olive oil until they are soft.
This will give the soup a better flavor & frying allows the strong fiber and proteins in the leeks to break down before cooking.

Put the cooked leek into the Crock Pot,

Wash and chop your Potatoes.
You do not need to peel them.
Chop your potato into even pieces about the same width as the leek, about 1 inch wide.
We want the potato to be chopped into similar size pieces so the potato all cooks at the same speed.

Prepare your bacon by cutting away any excess fat.
Then roughly chop the bacon into the same 1 inch sized pieces.

Put the bacon pieces on top of the Leek and Potato.

Cover everything with boiling water and put the Crock pot on the low setting.
You want enough water so everything is swimming, but not so much water that you will loose any flavor.

This will take at least 5 hours to cook on the low setting.
It is fine to leave it cooking all day, if you want to add a little more water you can.

If you check the soup while it is cooking you will notice the beautiful aroma.
Once the the potato is cooked the soup is ready to blend.

Use a kitchen whiz or a hand held blender.
Whiz the soup in the crock pot until you have a blended consistency you like.
We like to leave some leave some lumps in the soup, especially some bacon lumps because they are super tasty when you discover one!.
