Alice’s Whiz Chocolate cake.

A Chocolate & Coffee cake with Cheery Cream.

This cake is really nice, try serving it with chocolate ice cream for something a little bit special.

INGREDIENTS:

For the Cake:
2 Cups Sugar,
2 Eggs,
1 Cup plain yoghurt
(non-sponsored recommendation: Fresh and Fruity Greek Yoghurt),
2 tbsp Cocoa,
200g softened Butter,
2 tsp Baking Soda,
1 tsp Salt,
3 Cups self raising Flour,
1 Cup strong boiling hot Coffee,

For the cream:
300mls Cream,
1/4 cup white Sugar,
1 jar pitted (non-candied or non-glace cherries) cherries
2 tsp cherry juice,
non-sponsored recommendation: Delmaine Pitted Cherries,

METHOD:

Preheat your oven to 180o Celsius.

We used an easy release cake tin.
Line the bottom of your easy release cake tin with baking paper.
If you don’t have an easy release cake tin you will need to lightly grease your baking tin.

Measure or weigh out 200 grams of butter,
Soften the butter for 20 seconds in a microwave (or use your preferred method).

Into your kitchen whiz mixing bowl add:
2 Cups of Sugar .
2 Eggs,
3 cups of self raising flour,
2 Tablespoons of Cocoa.
2 Teaspoons of Baking Soda,

Your 200 grams of softened butter.

1 teaspoon of salt.
1 cup of non-sweetened Yogurt,
non-sponsored recommendation: Fresh and Fruity Greek Yogurt,

and, 1 cup of Hot coffee,
We used plunger coffee re-heated for 45 seconds in the microwave.

Slowly ease the mixer speed on and mix on a low speed for about 1 minute.

Use a rubber spoon to make sure the edges get mixed in.

Mix for a few seconds more until the cake batter looks completely mixed and silky smooth.

Using a rubber spoon, Put the mix into your cake tin.

Bake for 1 hour at 160o-180o Celsius.

Keep half an eye on the cake, we don’t want the top to burn.
You can put a piece of Baking paper over the top of the cake time to keep the top looking nice.

When it is firm to touch, check the cake is cooked.
To check if the cake is cooked, insert into the cake a cake prod (or kebab skewer) and when it comes out clean it is cooked.

Pop the cake tin bracket and remove the cake from the cake tin.

Take a large knife and cut the cake in two… top half and bottom half.
Separate the cake halves and let them cool.

To remove the top half of the cake without breaking either piece, Granny used a ‘plastic document holder’ the kind you might use in a filing cabinet.
Gently ease this between the layers and remove the top half and put upside don on a cooling rack.

Prepare the cream.
DO NOT put the cream onto the cake when the cake is hot because the cream will melt.
We prepare the cream first and chill in the fridge for about 1 hour.

Method:
In a bowl add:
1/4 of a cup of Sugar,
2 teaspoons of cherry juice,
300 ml of cream.

Stir the cream together before putting into the fridge for about 1 hour (or until the cake cools).

Drain the juice off your cherries.
Use a colander and a bowl.

We want the cherries well drained as any excess liquid will make the cream runny.

When the cake is cool.
Remove the cream from the fridge and beat until stiff.

Put a thin layer of cream on the bottom layer of the cake.
Add a good quantity of the drained cherries on top of the layer of cream.

Gently lift and place the top half of the cake on.
Add a thin layer of cream and more cherries to the top.
