Chicken Roast with lentils & Chorizo sausage (nice one Granny).
Fresh lentils are Gluten free.
Other than the planning it takes to soak the lentils overnight and the time to cook the chicken this meal could not be simpler.
Good food, great taste.

INGREDIENTS:
1 fresh or defrosted Chicken (Size 14 feeds about 6 adults),
1/2 a bag of lentils (soak overnight),
2 Chorizo sausages,
1 leek,
4 Carrots,
2 Fennel bulbs,
A good pour of orange juice,
3 handfuls of Currants (optional),

It is also nice to add a serving of cooked spinach to your plate,
Prep and cook your spinach 5 minutes before you serve.

Oven bags are not essential but they make clean up a breeze.
If you are not using an oven bag the preference would be to use a covered roasting dish before an uncovered roasting dish.

Method:

The Night before:
You need to soak your lentils in water overnight.
Use about 1/2 a packet of lentils and cover them with boiling water (from the jug).

Over night the lentils will swell and the water will turn a dirty brown color.
A light film of bubbles will be on top.
Strain and wash your lentils when you are ready to start cooking.

Time to cook:
Preheat your oven to 200o Celsius.

Now get your oven bag and put it opened into a roasting dish,

Strain and wash your lentils then put your lentils in an even layer inside the bottom of your oven bag,

Wash and cut 4 carrots.
The carrot pieces should be uniform in size and about 1.5 cm thick.
Put the carrot pieces into the oven bag,

In this recipe we just use the stem of the leek,
Cut away the top leaves of the leak and keep this for another meal.
Cut your leek stem in half and wash it,
Be sure to get the dirt out from all the layers.
Chop your leek stem into pieces.
The pieces should be uniform in size and about 1.5 cm thick.
Spread the leek pieces around inside the oven bag.

We use the whole fennel bulb, just wash and chop your fennel into chunky sized pieces,
Spread the fennel pieces inside the oven bag,

Add 3 hand full of currents inside the oven bag, spread them around a bit,

Slice your Chorizo sausage and spread on top of everything already inside the oven bag.

Now put your chicken inside the oven bag on top of everything.
Give a good pour of orange juice on top of the chicken.

Tie the oven bag,
Our oven bags came with an easy tie,

Put the Bagged chicken into the oven at 200o Celsius.
Cook for about 1 hour,
When you can prick the chicken with a knife and clear liquid comes out it is cooked,
Remove from the oven, cut the oven bag, carve and serve,

This is really delicious,
