Rhubarb Stew.
This rhubarb stew is a real family favorite with a delightfully sour flavor.
Eat this Rhubarb stew on it’s own, served with ice cream,
or you can use it as a filling… baked in a pie.
Rhubarb stew keeps well in the fridge.

Caution: Granny said “the leaves are poisonous,
Do Not Eat the Leaves.”

The Rhubarb stems are a beautiful red color when they are ripe.

INGREDIENTS:
Rhubarb
about 25-30 rhubarb stalks,
Sugar (1/2 cup).

Serving suggestion:
Make your own Easy Vanilla Ice Cream,

Method:
Wash and cut your Rhubarb into pieces.
Keep the pieces all the same length, between 1-2 inches in length.

Put the pieces into a pot,
Add 1 cup of boiling water,
Add 1/2 a cup of sugar,
If you like it sour add a little less sugar…

Pop your pot on the stove on a high heat and bring to the boil.
Stir the rhubarb occasionally,
Do not let it burn,

Once the Rhubarb is boiling turn the stove temperature down, put the pot lid on and let the rhubarb simmer,

Stir occasionally,

When the fibers break down it is ready to serve and eat.
This takes about 10 minutes of simmering.

Eat Rhubarb stew on its own, as a pie filling or serve with ice cream.

Now you have the stew you can use it as a filling for a baked pie.
