Our Trifle is made over 3 days, you can make it quicker.
Remember each layer needs time to set and cool before adding the next layer on top.
Trifles taste better with a little age (2-3 days old).
We use ginger beer just the way Nana used to make it.

Day 1: Ingredients & Method

Day 3: Ingredients & Method

Day 1

(Day 1) INGREDIENTS:
Plain sponge base,
2 packets of raspberry jelly,
1 cup of ginger beer,
1 box of frozen mixed berries,

Day 1: Method
On Day 1 we make the sponge, berry and jelly base.

First cut your sponge into small pieces.
Place the sponge pieces into the bottom of a large bowl,

Add a glass (1 cup) of ginger beer.
Add your packet of frozen berries,
we used Pam’s mixed berries,

Now make your jelly and pour it over the top,
use 2 packets of raspberry jelly & 4 cups of hot water,

Mix the ingredients together,
You need the jelly to be through the entire mix,

Put the sponge, berry & jelly mix in the fridge overnight, (or until the jelly has set),

When the Jelly is set we are ready for the next stage (Day 2).

Day 2

(Day 2) INGREDIENTS:
2 tablespoons of Custard powder,
1 tablespoon of Sugar,
2 cups of Milk,

Day 2: Method
Make a custard,
Use Grannies trick for lump free custard Grannies lump free custard,

Or,
Put 2 tablespoons of custard powder and 1 tablespoon of sugar into a cup,
Add a little milk and mix until lump free,

Top up the cup with milk and pour this into a saucepan,
Add a second cup of milk and heat,
You will need to keep stirring the custard mix,

Heat and stir until the custard thickens,
Keep stirring as we do not want to burn the custard,

Now you need to sit the custard and let the custard cool,
this will stop the jelly melting when we add it on top,
We need the custard cool but still a little runny,
When cool, add the custard on top of the Jelly mix,

Put the trifle back into the fridge (overnight),
When the Custard is set we are ready for the next stage (Day 3).

Day 3
 
(Day 3) INGREDIENTS:
1 pint (600mls) of cream,
Icing sugar to sweeten (about 2 tablespoons),
Strawberries, blueberries and some form of chocolate to decorate the top.
Every decoration is different try mint sticks for a tasty variation.

Day 3: Method
Today we add sweetened whipped cream, berries and chocolate to the top.

1 600 ml bottle of cream is more than you need,
Whip you cream with about 2 tablespoons of icing sugar,

We like soft peak consistency,
Put the Cream on top of your trifle and decorate with berries and chocolate,

Start with some grated chocolate,
Add some strawberries halves, some blueberries…?

Refrigerate and serve,
