Lamb Roast With Oyster Stuffing.

This lamb roast is wrapped inside a bread dough which gets discarded once the meat is cooked. The Dough ensures the meat is cooked moist and tender. If you like oysters this is a great stuffing and really enhances the flavor of the meal. This Lamb roast takes 2 hours to cook and about 30 minutes to prepare.

INGREDIENTS:
1 boned foreleg of lamb,
6-8 Oysters,
2 cups of bread crumbs = 4 pieces of bread
non-sponsored recommendation Vogel’s Spelt & Flaxseed bread,
1 egg,
1 lemon,
1 apple,
A sprig of Rosemary,
3 cups Whole meal Flour,
3+ teaspoons of salt,

Some potatoes & Pumpkin,
Don’t forget to add a Salad
Today we also had some of Granny’s beetroot,

METHOD:

Preheat your oven to 200o Celsius,

Prepare your stuffing:
Take 4 pieces of bread and crumb them.
You can use your kitchen whiz.
For bread we used ‘Vogels spelt & flaxseed – Toast slice’.

Into a bowl:
Break 1 egg and beat it lightly,
Add the juice of 1 lemon,
Core and grate in one apple,
Add a little salt and pepper.

Wash and chop 6-8 oysters,
Add them into your bowl,

Add 2 cups of the bread crumbs,
Mix it all together with a spoon,

Prepare your lamb:
Now we need to put our lamb out.
Open your boned foreleg of lamb on a flat surface and place the stuffing into the middle.
Fold the lamb sides into the top so the stuffing is inside.
Put the lamb to one side.

Now we need to prepare our dough wrapping:
Roughly chop your sprig of rosemary,
Put the Rosemary into a large bowl,
Add 3 cups of whole meal flour,

Now add 3 teaspoons of salt,
We always use Himalayan pink rock salt so it needs to be ground first,
N.B. We do not eat the salt in the dough so do not worry about the large quantity,
Add water and mix into a dough,

Put a dusting of flour on your work bench and roll out the dough,
Now bring your stuffed lamb and wrap it in the dough,
Seal the edges with a little water (by dipping your fingers in water)
Pat and make sure it is sealed and in good shape,

Add oil to your roasting dish and put the roast into a preheated oven,
Pop it into your preheated oven at 200o Celsius,

After about 1 hour,
Wash and cook your potato,
Add your pumpkin to the oven and make a salad,

After about 2 hours remove the roast and break open the crust,
It pays to wait as once the case is open it cannot be resealed,

Rest your meat for 5-10 minutes inside the crust.
Break open and remove the crust,

Serve with salad and vegetables,
