Fig & Walnut Meringue

This is a simple to make treat, if you like meringue you should try this!
Eat hot for a complex flavor or cold as a tart.

INGREDIENTS:
6 egg whites,
Brown sugar 250 grams,
Walnuts 180 grams,
Figs (about 10),
A little cream for on top (optional),

Some baking paper to line the bottom of your baking tin,

METHOD:
Lightly grease the sides of a spring release cake tin & cover the bottom with baking paper.

Separate your eggs and put your egg whites into your kitchen whiz,
We do not use the yolks but you can make lemon spread with them,

Turn on the kitchen whiz to a medium speed.
Our Kenwood chief was on the #5 setting
Beat your egg whites until stiff,

While the egg whites are beating.
Weigh out 180 grams of walnuts,
Put the walnuts onto a baking tray and toast them at 200o degrees Celsius,
This does not take long, check them regularly.
When they are nicely toasted remove from the oven.

Turn your oven down to 170-180o Celsius,

Chop and de-stem your figs,
We used about 10 figs,

Combine your walnuts and figs in a bowl,

Weigh out 250 grams of brown sugar,

When your eggs are stiff,
Add 1 tablespoon of brown sugar at a time into the beaten egg whites in the kitchen whiz,
Beat well before adding the next spoon of brown sugar,

Beat until each tablespoon of brown sugar is well mixed,
Repeat until you have added all the brown sugar,

Once all the brown sugar is well mixed into the egg white.
You will have a nice looking meringue mix.

Take a large spoon of the meringue and mix it in with the fig & walnut in the other bowl.
This ensures the mix is well combined,

Remove the mixer attachment,
Add the walnut, fig & meringue mix back into the meringue,

Using a large spoon fold the mixture until combined,
Be gentle, combine well,

Once combined,
Put the mix into your greased and lined baking tin,
Use a knife to push the mix to the edges,

Now we are ready for the oven!

Use a low rack in the oven (not close to the top),
Bake for 40-50 minutes,
The oven should be at 170-180o Celsius,

You will know when the Fig & Walnut Meringue ready because, the meringue will be firm to press on the top and the meringue will be pulled away from the side of the baking tin,

Release the spring and run a knife around the edges to ensure nothing has stuck,
Remove from the baking tin,

Serve hot with a little whipped cream,

It is also nice cold on its own.
