This recipe makes very light Whitebait patties.
250 grams of Whitebait will make 16 small patties.

INGREDIENTS:
Whitebait 250 grams,
2 eggs,
Salt & Pepper.

METHOD:
Separate 2 egg whites.
Whisk the egg whites to soft peak stage.
Add whitebait and fold in gently.

In a frying pan add a small amount of butter.
Place spoonfuls of the Whitebait mixture in to a hot frying pan & cook until browned.
Turn and brown the other side.
When you turn the patties you can gently pat them to flatten slightly.
Cook patties in batches to suit the size of the frying pan.

Serve with a salad and some Bar-be-queued asparagus.

Salt and pepper to taste.
Fresh Whitebait has a subtle taste so be cautious not to loose the flavor by over seasoning.
