Water Cress & Leek Soup With Poached Lamb Mince Balls,
This soup is very tasty and packed full of ‘goodness’ for all aspects of your health.
Water cress has a peppery taste when raw, however once cooked the pepper taste is removed.

INGREDIENTS:

1 large leek
1 onion finely chopped
2 cloves of garlic (we use Masterfoods finely crushed garlic)
2 Bay leaves
1 bunch watercress
2 tsp powdered chicken stock (1 litre of fresh stock can be substituted)
200g approx. Lamb mince
2 Tablespoons rolled oats
Splash of cooking oil (we use bran oil)

You will need a good sized pot.

METHOD:

Chop your onion and prepare your leek,
Start by cutting your leek in half (length wise) and then split the half down the length of the stem,
Wash your leek to make sure there is no dirt between the leaves.
Now wash the top (green) half of the leek and chop,

Add a good splash of cooking oil to your pot, we used rice bran oil.
Heat the oil in a deep saucepan over a medium to low heat, first we will saute the onion and leek.

While the onion and leek saute, wash and roughly chop your water cress.

Make 1(litre) of chicken stock, we used ‘Vegeta’ Chicken stock mixed with boiling water. Add the chicken stock to your soft onion and leak
Next add your water cress,
Add a teaspoon of garlic, stir and leave to simmer.
We used ‘Master foods finely crushed garlic’ (non-sponsored recommendation).

Give it all a good stir and finish with two bay leaves,

While your soup comes to the simmer prepare your meat balls,
Add about 2 tablespoons of rolled oats to your mince and meld together using your hand,

Pinch off small pieces of meat and roll into balls,

Once you have balled all the meat, drop them into your soup to poach,
These will poach in the soup in approx. 3 minutes as you bring it to the boil

Once your meat is cooked and your soup is hot you are ready to serve and eat.
