Lambs Fry With Mushroom Sauce.
Lambs fry or Lamb liver comes from 1 year old Lambs.

INGREDIENTS:
1 piece of Lambs fry (Liver),
6 button mushrooms,
3 spring onion (or a large red onion),
1 knob of butter,
1 pour of cream,
1-2 tablespoons of flour (wholemeal),

METHOD:
Prepare your spring onion.
Clean and slice and set aside.

Next wash your Lambs fry in warm water,
Using a knife remove the outer membrane on the liver, which is like the skin on a sausage. To do this make a small cut, enough to catch the membrane, then peel it off. You may need to make a few attempts to get it all off.

Now you cut your liver into slivers about 8 mils thick. Angle your knife to about 30 degrees and keep the slices of liver to an even thickness.

Add a good nob of butter to a large frying pan and put on a high heat.

On a clean chopping board,
Wash and trim the stems off your mushrooms,

Slice your mushrooms evenly placing the stem end on the board.
Slice evenly to about about 8 mils thick.

Put the mushrooms in frying pan once the butter is melted and ready to fry.
Caramelize your mushrooms.
Before the mushrooms are completely cooked, clear the center of the pan by shifting the mushrooms to the edge of the pan.

Into the cleared center of the pan add your liver a piece at a time.
Let the liver cook until nicely browned on one side,
Then turn over the liver,

Once the liver is looking cooked and browned.

Turn down your fry pan to a medium heat.

Pour in your cream, until the liver and mushrooms are standing in cream.

Gently move the liver and mushrooms about and add about 2 table spoons of flour in to areas where the flour can easily be mixed into the cream. We want a nice thick cream of mushroom sauce.

Finally add your spring onion and cook for just a few short minutes.
Gently move and stir all the ingredients to make sure you don’t let anything burn or get stuck to the pan.
Finally serve and eat.
