Shrimp Cocktails – made the old school way.
We made these for years both as an appetizer for meals and they were also a favorite for the kids to make on getting home from school. These are the easiest Shrimp Cocktails to make and once you get the sauce right you can’t go wrong.

For 4 Shrimp cocktails you will need:

INGREDIENTS:
1 tomato,
1 carrot,
1/3 of a lettuce,
2 tbsp capers,
2 tbsp Mayonnaise,
A splash or two of Tabasco sauce,
300g Shrimps (or 2 cans),

A few chopped spring onion for presentation.

METHOD:
Start with your head of lettuce.
We like to remove the core of the lettuce to keep them remaining nice and fresh.
To do this slam the lettuce stem down on a chopping board, not too hard just enough to give the core a good knock.
Next use your fingers to break the remaining outside leaves around the core and the core will just pull straight out.
This leaves you with a beautifully cored lettuce.

Now cut off about 1/3rd of the lettuce.
Finley slice so it is shredded.

Add the lettuce to the bottom of the bowls you will be serving in.

Next make your dressing in a mixing bowl:
Finely chop your tomato and grate your carrot.
Take about 2 heaped tablespoons of capers and roughly chop.
Add the capers to the carrot and tomato along with two tablespoons of mayonnaise to the mixing bowl.

Add a splash of the capers juice and a dash or two of Tabasco sauce.
Mix together well and set aside.

The Shrimp:
You can use fresh shrimp, frozen shrimps or canned shrimps.
Listed above in order of preference.
There is not much of a price difference, but when you purchase your shrimp keep in mind how long it will be before you intend to eat them.

For any shrimp make sure they are drained and strained.
Don’t rinse them too much as you want to preserve the flavor.

Add an even measure of shrimp to the top of the lettuce in the serving bowls,
Top with a healthy amount of dressing.

As a finishing touch add a few chopped spring onion.
Now refrigerate until ready to eat,
