Tripe, Tomato & Beans.
This is a great way to eat tripe. A real mix of fresh and canned ingredients.
Use what you have to-hand for a true makeshift Kiwi meal.

For this recipe you can use whatever you have in the pantry.
Tripe, tomato & beans is really easy to make.

INGREDIENTS:
A nice fresh piece of tripe (try New World supermarket),

1 fresh tomato,
1 can tinned tomato (any kind),
1 carrot,
1 large onion,
1 can Cannellini beans,
1 handful of string green beans,
Garlic,
Chili flakes,
Paprika,
Parsley or coriander,

Serve with a little grated Parmesan cheese, cracked black pepper and buttered Ciabatta bread.

METHOD:
Start by dicing your onion,
In a frying pan with a little bit of oil saute your onion and a teaspoon of garlic.
When the onion is getting soft, add 2 teaspoons of paprika and add your chili flakes.
For both the garlic and chili you can use freshly chopped if you have it.

Keep stirring occasionally to make sure nothing sticks to the pan.

Prepare your carrot and celery, wash, top and tail.
Chop your carrot in half and then split it lengthwise into 3 even pieces.
Chop the lengthwise pieces of carrot across the end into small pieces (about 5mm thick).
Repeat until all your carrot is chopped.

For you Celery,
Chop the celery into small stalk width pieces, about the same width as you chopped your carrot.

Add your carrot and celery to the onion in the frying pan,
Mix together well and add about 3/4 of a cup of boiling water (from your kettle).

While the carrot and celery soften prepare your tripe.
Start by washing and removing any fatty bits from the inside of your tripe.
Cut the pocket so the tripe is open and flat, then slice thinly.

When your carrots are starting to soften and the liquid is evaporated,

Add you tin of tomato to the frying pan mixture,

Halve and thinly slice your fresh tomato,
Add you fresh tomato to the frying pan mixture,

Strain and wash your tin of Cannellini beans,
Add you beans to the frying pan mixture,

Stir everything together.

Add you sliced tripe to the mixture,

Top and tail your green string beans,
Add you string beans whole to the frying pan mixture,

Cover with a lid and let the mixture simmer.

Roughly chop your parsley (or coriander) and add this to the simmering mix.
Cover and simmer some more,

Once the string beans are cooked it is ready to serve and eat.

Serve with a little grated Parmesan cheese, cracked black pepper and buttered Ciabatta bread.
