Venison Back-Steak.
Cooking venison is like cooking fish (do NOT over cook). Remove your meat from the heat before it is cooked right through, and rest the meat. This will result in a beautifully cooked piece of venison.

This is a nice way to enjoy venison in your own home & it tastes as good as any we have eaten anywhere!.


INGREDIENTS:
Venison back steak,

6 potatoes,
1 Kumara (sweet potato),
Salad made from 1 carrot, red onion, red cabbage, cabbage.
We also added pine nuts and sliced almonds to the salad.
1 bunch of Asparagus,

A little salad dressing & sauce:

Serve with a heated Barkers rich red plum sauce.
This is a delicious compliment for venison.

METHOD:
Make a quick salad using cabbage, red cabbage, a red onion and carrot.
To get long thin strips of carrot use a vegetable peeler.
We also added pine nuts and sliced almonds to the salad.

Peel and boil some potatoes and kumara.
Cook and mash separately.
Blanch your asparagus.

Heat some oil in a frying pan.
We are using Rice Bran oil.
We sear the venison.

If you have a splatter guard use it.
Once the Venison is cooked on the one side, turn over.

You want to remove the Venison from the frying pan before it is cooked right thru.
This is when the meat is still red but there is no blood.

Rest the meat and the venison will continue to cook.
This will prevent overcooking the meat.

Make a bed of mash on your plate.
Put kumara and potato mash side by side.
Add Salad and dressing.
Add your sliced Venison and some heated Red Plum sauce.

Add your Asparagus to the side of the plate and serve.
