Truffles – 3 ways.
We are making a selection of sultana, ginger & cherry fillings.
Any combination of these fillings will work well.
These are great to have any season of the year.

Truffles freeze well so you can make them ahead of a special occasion.


INGREDIENTS:
50 grams Butter,
4 Tlbsp Milk,
200 grams sugar,
3 tablespoons cocoa,
12 tablespoons milk powder,
Vanilla essence,
Sultanas, cherries, ginger or combination of all,

Desiccated coconut &/or chocolate hail.

METHOD:

Put into a large saucepan:
50 grams Butter,
4 Tlbsp Milk,
200 grams sugar,
Melt all together in saucepan & allow to cool (as it mixes better).

Once this mix has cooled,
ADD 3 tablespoons of cocoa,
12 tablespoons of milk powder,
and your Vanilla essence,

Sultanas, cherries, ginger or combination of all
You should roughly chop your ginger and cherries before adding to the mix.

For Truffles 3-ways, split the mix into three parts and add Sultanas to one part, cherries to the second part and ginger to the third part.

Mix well in separate bowls and chill in the fridge.
The mix will start to harden after about 2 hours.

Once the mix is firm enough to roll into balls and hold its shape.
Place small spoonfuls into the coconut and roll into balls.
You can use other toppings instead of coconut like cocoa, chocolate hail or chopped nuts.

Return to fridge till ready to serve.
