INGREDIENTS:

Scone dough
3 cups Plain Flour
6 tsp Baking powder
¼ tsp salt
50 grams Butter
1¼ cups milk

Topping
¼ cup Brown Sugar
1 tsp cinnamon
50 g soft Butter.

METHOD:
Pre-heat your oven to 200odegrees Celsius.

Sift 3 cups of flour and 6 teaspoons of baking powder into a large bowl,

Grannies tip:
Sift half the flour into the bowl, add the baking powder into the remaining flour and stir the baking powder into the flour before you continue to sift.
This helps disperse the baking powder through the mix.

Once the flour is all sifted add your pinch of salt.

Get 50 grams of Butter,
Cut & rub the butter into the flour until it looks like soft bread crumbs,

Get the crumbing process started using knives.
Cut the butter into the flour.

Once the butter is cut into the flour.
Use your hands to finish rubbing in the butter.

Add 1 & 1/2 cups of milk & mix quickly to a soft dough using a knife,
You can finish the knead with your hands.
Do not knead a lot, just so the dough is holding together.

Using a rolling pin,
Roll out the dough to 1 cm thick…
Do this over baking paper to avoid sticking.

To make the cinnamon topping.
Soften 50g of Butter in the microwave for 20 seconds,
The butter should be soft but not runny.
Give the butter a quick stir before adding the next ingredients.

Add 1 tsp of cinnamon and a ¼ cup of Brown Sugar.
Mix well and spoon on top of the dough.
Spread the topping evenly, right to the edge of the dough.

Roll into log and cut into 2cm slices.

Grannies tip:
When you cut the dough, dip your knife into the flour packet.
This dusts the knife blade with flour and stops the dough sticking to the knife.

Place on baking tray nearly touching, which has been lined with baking paper.

Bake 10-12 minutes @ 220o Celsius
Remove when cooked & golden brown.

Delicious on their own or with butter and jam.
