Pikelets – hot cakes.
Piklets are always popular whether for breakfast or bring a plate.

INGREDIENTS:
2 cups of flour,
2 teaspoons of baking powder,
2 eggs,
1/2 a cup of sugar,
1 & 1/2 cups of milk,

We choose not to add 1/2 a teaspoon of salt.

Method
Sieve into a large mixing bowl 2 cups of flour and 2 teaspoons of baking powder.

In a separate bowl add 2 eggs and 1/2 a cup of sugar.
Beat well until thick.

Pour your egg & sugar mix into your flour and baking powder mix.
Add 1 cup of milk and mix together.
As you batter mixes you will see that there is some still dry.
Add a further amount of milk, up to 1/2 of a cup.
Mix well until smooth.

Heat a non-stick frying pan.
If you do not have a non-stick frying pan you will need to use butter.
Let your pan heat a little but do not let the butter get so hot it starts smoking.

When your frying pan is hot, use a spoon to add pancake sized amounts of batter to your frying pan.
Cook until lots of little bubbles appear on the top of the piklet.
The bubbles should cover the top of the piklet.

You should then flip your piklet over using a spatula.
The second side cooks fast.
Lift the edge of the piklet to check when it is cooked.

When golden brown remove from the frying pan.
Wipe your frying pan with a paper towel then repeat until you have cooked all your piklets.

These are great hot or cold.
Serve hot with fruit & maple syrup or cold with jam and whipped cream.
