Macaroni cheese.
A simple macaroni cheese with bacon.
Add a hot pepper sauce on top and serve with a side of baby spinach leaves & some tiny tomato.

INGREDIENTS:
1 packet of Pasta,
we use macaroni elbows or penne,
1 onion,
200 grams of bacon,
2 tablespoons of butter,
2 tablespoons of flour,
1 cup of milk,
1 teaspoon of Dijon mustard,
1 cup grated cheese,

METHOD:
Start by boiling pasta, according to packet directions.
Leave the pasta cooking while you make the sauce.

When the pasta is al dente (cooked but still firm & not too soft) drain off the water and put the cooked pasta into a large oven dish.
It is nice to drain using a colander and wash the pasta with boiled water from the kettle.

Make your sauce:

Chop the onion and the bacon.
We want small squares for the onion.
First cut you onion in half then thickly slice. Once you have yous slices cut across the grain to make the small squares.
The bacon will be slightly larger squares than the onion. Remove the bacon rind before cutting.

Grate the cheese, you will need about 2 cups of grated cheese.
Mama G uses a big hunk of Edam and a smaller portion of Parmesan cheese.

In a medium sized saucepan.
Start by melting 2 tablespoons of butter
Once you butter has melted saute your onions until tender,
Once your onions are soft add your bacon.

When your bacon is lightly cooked we will start to make the roux,

Add 2 tablespoons of flour directly into the saucepan, on top of the cooked onion & bacon.
Mix everything together well to form a paste.

Using a spoon, push the all the onion & bacon paste to one side of the pot.
Add a splash of milk, let the milk warm and then mix together with the paste.
This will stop you getting a lumpy sauce.
Repeat adding, warming and mixing in more milk until you have a white sauce.

While string, gradually add your 2 cups of cheese and 1 tablespoon of Dijon mustard to your sauce.

Stir in the cheese as you add it to the sauce to make sure it all gets melted and thoroughly mixed through the sauce.

Into your large oven dish which has your cooked pasta, pour your cheese sauce on top.
Gently mix the sauce all through the pasta.

You can top with extra cheese if you like.
Bake your Mac and cheese in the oven at 160 for about 20 mins.

Serve while hot.
If there are left-overs,
Once cooled we cover with GLAD® cling wrap and refrigerate.
Add a hot pepper sauce on top!
