Custard Squares.
If you like custard squares why not make your own. This is a super easy method to make your own delicious custard squares.

INGREDIENTS:
1 Liter of milk,
6 Tablespoons of Custard powder,
6 Tablespoons of Sugar,
1/2 a packet of Icing sugar,
1 & 1/2 heaped tablespoons of Butter
4 Flaky puff pastry sheets.
We use frozen from the supermarket which we do not need to muck around rolling out the pastry which is very time consuming and fiddly.

METHOD:

Make a thick custard.
We are using 1 liter of cold milk.
So either buy a 1 liter container or measure out 1 liter of milk into a container before you start.

In a bowl,
Add 6 heaped Tablespoons of Custard Powder & 6 Tablespoons of Sugar.
From your 1 liter of milk, pour a small amount of milk into the bowl with the custard and sugar.
Whisk the milk and dry ingredients together and add a little more milk until you have a smooth runny liquid.
We do not want to use more than about 1 & 1/2 cups of milk for this.
We want our custard mix to be a lump free liquid of a pouring consistency.

Put a large pot on the stove, on a medium heat.
Pour in the remaining part of your 1 liter of milk into the pot and bring to the boil.
You need to be watching your milk and be ready with your runny custard liquid.
When you milk begins to boil the milk will quickly rise up the pot and boil over.
So just as it starts to rise up the pot, pour in your custard mix and stir briskly,
You will have a thick custard. Remove from the hot stove immediately and place your pot on a cool surface.
We don’t want the custard to cook anymore or to burn.

Preheat your oven to about 220o degrees Celsius.

On a flat baking tray:
Place 1 sheet of flaky puff pastry.
Use a fork to prick the pasty sheet all over in a grid like pattern.
This is so the hot air will escape and the pastry sheet will stay thin when baked.
There is no need to grease the tray.
If you are using frozen pastry sheets you can put them in the oven frozen and prick them all over as they defrost.

You need to bake each pastry sheet.
Once your oven has reached temperature 220o degrees Celsius put the first sheet in the oven. Be sure to remove the blue plastic sheet from the bottom of the pastry sheet.

If the pastry inflates with air we need to to prick the pastry again with a fork and use a spatula to gently press down to get the air out.
When the pastry sheet top turns a nice shade of golden brown’ turn the pastry over.
Cook the other side of the pastry until golden brown.

We recommend you cook four sheets of pastry.
This will give you two really big custard squares, which you will cut into smaller custard squares.

You will need to clear enough space in your refrigerator to chill your custard squares.
Think about who is going to help you eat these because you are going to have plenty.

Assemble your custard squares:

Place one cooked pastry sheet flat side down on a cool tray or bread board.
This means we want the curled corners of the pastry sheet facing up.

Spoon your cooled custard onto the pastry sheet & spread this evenly over the whole pastry sheet.

Put the top sheet of pastry on.
This pastry sheet (the top) should be flat side up.
This means we want the curled corners of the pastry sheet facing down.

Once the Custard square is assembled use the flat edge of a knife to square the custard edges.

Finally we will make a butter icing to finish our custard squares.

Butter Icing:
Microwave 1 & 1/2 heaped tablespoons of butter for 10 sec till soft but not runny.
To your butter add 1/2 a packet of icing sugar and a few drops of boiling water.
Stir your butter and icing sugar together,
Add a little more boiling water, drop by drop, and stir until you have a thick butter icing.

Ice your custard square & refrigerate.

Using a sharp knife, cut your large Custard squares into treat sized pieces.

These squares always taste better the next day if you can keep them that long.
