Cheese cakes.
These are the delightful treats than Nana used to make.
A pastry base with a delightfully textured cake topping and a raspberry jam center.

INGREDIENTS:

Flaky puff pastry,
2-3 Sheets of flaky puff pastry will make about 20 cakes,
Raspberry Jam,
115 grams of Butter ,
115 grams of Sugar
2 Eggs
140 grams of Flour
1 teaspoon of Baking Powder

METHOD:
Pre-heat your oven to 180o Degrees Celsius.

Lightly grease 2 cup cake baking trays,
Thaw and cut 1 pastry sheet at a time.
We want to cut the pastry sheet into 9 even sized squares.
And line about 20 cup cake patty tins with the pastry.
We will keep the last pastry square to put a finishing touch on the top of each cheese cake.

Put 1 teaspoon of the raspberry jam on top of each piece of pastry.
Don’t be stingy with the jam , but make sure the jam is in the center so it doesn’t creep up the sides.

Now to make the cake topping.
Weigh out 115 grams of both Butter and sugar.
In a microwave safe bowl microwave the butter for 20 seconds until soft.

Combine the butter and sugar into a kitchen whiz mixing bowl and start mixing on a low speed.
Cream the butter & sugar until light & fluffy

Next add 2 eggs one at a time, beating well after each egg.

Weigh out 140 grams of flour and put this in another bowl.
Add to the flour 1 teaspoon of Baking Powder.

Keep the mixer on a low speed and gently tip the flour & baking powder combination into the mixer.
Keep mixing in the flour & baking powder until everything is combined to make our cake mix.
Stop the cake mixer and use a rubber spoon to move any mix from the side back into the cake mix.

We now put a large spoonful of the cake mixture on top of our jam & pastry bases.
Use a second spoon to push the mix off the first spoon.

Cut your last piece of pastry into thin strips and finish each cheese cake with a small strip of pastry.
You can make crosses or other shapes for your design.

In your pre-heated oven bake for about 20 minutes at 180o Degrees Celsius.

The Cheese cakes will start to rise and change into a golden brown color while they are baking.
You can check if they are cooked by patting them gently on top.
When the cheese cakes are golden brown and not too spongy to press they are ready to be removed from the oven.

Let them cool a little and remove them from the cupcake tins using a knife.
You should be able to gently ease them out.
