Peanut Brownies.
An always popular cookie.
Warning: Contains Peanuts.

This recipe is a long time family favorite … quick to make with few ingredients…
These cookies freeze very well if they don’t get eaten.

You will need a cake mixer.

INGREDIENTS:

250g of Butter,
2 cups of sugar,
2 eggs,
3 cups of flour,
Granny used Spelt flour however you can use any flour.
2 cups of peanuts,
2 teaspoons (tsp)of Baking Powder,
4 tablespoons (tbl) of Cocoa,

METHOD:

Preheat your oven to 200o Celsius.

The first thing we do is cream the butter and sugar.
Granny said “the more creaming the nicer the biscuits”
You need the butter to be soft so it pays to heat the mixing bowl in a sink full of hot water.
Then start melting the butter in the bowl.
Use 250g of Butter, which is half a block of butter.
Chop the butter into smaller pieces and add them to the bowl.

Do not let the butter go runny (turn liquid).

Add 2 small cups of sugar.
Use a rubber spoon to start the mixing and creaming process.

Put the bowl into the Kitchen whiz and continue creaming.
This will take about 5 minutes.

Use a medium speed on the kitchen Whiz.
The butter and sugar will become creamy looking.

When the mix looks creamy add your two eggs and keep mixing.

When it is nice and creamy we will add the other ingredients.

Add:
4 Tablespoons of Cocoa and,
2 Teaspoons of Baking Powder and,
1 Cup of flour.

Then pulse the Kitchen whiz on low to begin blending the mix before you add the rest of the flour.
This stops the dry powders in the mix flying everywhere when you blend.

Now add the rest of the flour (2 more cups),
Keep the mixer on a low speed.
You will need to steady the mixer as it will move around. Like an uneven load in a washing machine.

Stop the mixer and Add 1 cup of peanuts into the mix.
Turn the mixer on a low speed.
Hold onto the mixing bowl because it will move around.

Add the second cup of peanuts while the mixer is going.
We want to mix in the peanuts and this does not take long.

Once the peanuts are mixed in you are ready to shape and bake the cookies.

Onto a greased tray, add a spoonful of cookie dough (a cookie sized amount).
Granny uses 2 desert spoons, one spoon to get the amount of cookie dough needed & the second spoon to push the mix onto the baking tray off the first spoon.

You can press down gently on the top with the back of a spoon.
You do not need to flatten them.

Reduce the heat of your oven to 180 degrees Celsius.
Pop them into your pre-heated oven for about 10 minutes.
You can tell when they are ready because you can gently lift them.

Another way to prepare them is to take a spoonful of mix into your hand.
And gently roll the mixture into a ball.

You can prepare the second batch while the first is in the oven.
Put the balls on a tray then gently press down on top with a folk.
This will give a nice cookie pattern on top.
You decide which finish you like, they taste just as good either way.
