Vegetarian Pasties.
The reason we make these vegetarian is that they simply taste the best.
The combination of vegetables with feta cheese is delightful.
Honestly these are so delicious, try them with a little sweet chili sauce.

INGREDIENTS:
Veges:
6 Potatoes,
1/4 of a pumpkin,
3 parsnip,
3 carrot and,
a head of broccoli.

Flaky Puff Pastry, 5 sheets makes 10 pasties.

1 egg,
Some milk to brush over the pastry,
Feta Cheese,
Goats Feta is the best but might be too strong for kids so you can use Cow Milk Feta.

Sesame seeds to sprinkle on the top.

METHOD:


Get your vegetables and prepare them by washing and peeling.
Remove the skin from the pumpkin.
Cut all the vegetables into small even pieces.
Small pieces will allow a good combination inside your Pasties.

The vegetables get mixed during cooking.
Once you are ready put all the vegetables into a large pot, cover them with boiling water from the Jug.

Boil the vegetables until they are cooked but not squishy.


Drain the vegetables using a a colander.

Leave the vegetables to cool.

Get your egg wash ready, we will use this to seal the Pasties.
Put your egg and a splash of milk into a small bowl.
Give it a whisk with a folk.

Prepare your Feta cheese by slicing into 3 millimeters thick pieces.
You need 1 slice for each pasty.
I prefer Goats Milk Feta, Cow’s Milk Feta is good for the kids.

Thaw your pastry sheets.

Then cut each sheet diagonally in half.

Now add a spoon full of the vegetable mix on to the pasty sheet half.
Place the vegetables in one half of the sheet and away from the edges.
Do not try and add too much vegetable mix into the pasty. You need enough space to fold you top over and add a slice of feta cheese.
Any left over vegetables are great micro-waved over the next few days with a little sweet chili sauce on top….mmmm

Brush the inside pastry edges with the egg wash.
Take the top corner and fold it over.
This will create a triangular Pastie,
The egg wash will ‘glue’ the top and bottom together

Now take your folk and press the prongs around the edges.
This makes a pretty pattern but more importantly seals the Pastie into a closed unit.

Using a sharp knife, cut 3 diagonal slits in the top of the pasty, about 1 centimeter apart.
This will allow the hot air to escape and looks good.

Brush the whole of the top with the egg wash.
Sprinkle a teaspoon amount of sesame seeds on top.

Put a sheet of baking paper on a flat oven tray.
Add you pasties as you finish each one.
Make sure you remove the blue plastic from underneath each pastie.
You will need to plan how you will get the maximum number of pasties on your oven tray.

If you do not have baking paper, lightly oil with olive oil…
do not use too much or you’ll end up with a smoke filled oven.

Put them in a preheated oven at 200o degrees Celsius.
Keep an eye on them so they do not burn, When the pastry is golden brown they are ready.

Serve with a side salad and a little salsa.
Eat them while they are hot!
