Quinoa Salad with BBQ Chicken.

Quinoa or Keen-wah is a new food for our family.
Quinoa is a grain originating from South America which many consider a super-food.

High in protein and vitamins…
Wheat & gluten free.

This is a salad we cooked to see for ourselves just how delicious Quinoa is.

INGREDIENTS:
1 cup quinoa,
1 teaspoon dehydrated chicken stock (or 2 cups fresh stock),
Chicken (thighs or breasts),
Ground Paprika,
Rice bran oil,
Salt and pepper,
Handful dried cranberries,
1 courgette grated,
1/2 cucumber,
1 or 2 tomatoes,

3 tablespoons of chopped spring onions,
A handful of Pumpkin seeds,
A handful of fresh parsley.

METHOD:

Rinse and drain 1 cup of quinoa seeds
Put the quinoa seeds into a medium sized saucepan.
Sprinkle in 1 teaspoon of dry chicken stock and cover with 2 cups of hot water.

Bring your quinoa to the boil,
Once boiling reduce the heat and simmer for 10 minutes until all the water is absorbed.
Once the water is absorbed, remove from the heat and stand covered for another 10 minutes.
We want the Quinoa quite cool when we add it to the salad ingredients.

While your quinoa is cooking prepare your chick and salad.

Rub your chicken pieces with rice bran oil & sprinkle with paprika
BBQ your chicken till cooked.
Once cooked, cool your chicken and slice the chicken lengthwise into chunky pieces.

Chop 1/2 of your cucumber into smallish pieces,
Roughly chop your parsley,
Put into a large bowl together with a large handful of dried cranberries.

Add a handful of pumpkin seeds,
We have used 3 tablespoons of chopped baby spring onions.
You could use fresh chives, we were careful not to overpower our salad with too much spring onion.

Chop and add 2 small fresh tomato,
Grate your courgette and add to your salad mix.

Toss your salad ingredients together with a little salt and pepper.

Into you salad add half your cooled quinoa.
Fold this together,
Add the rest of your quinoa in and complete mixing your Quinoa salad.

You can mix the Chick into the salad or serve the salad and add chickn pieces on top.
