Scotch eggs with beef mince.

Try these delicious Scotch eggs wrapped in Beef mince and rolled in Quinoa.
There are alternative combinations of ingredients but we find Beef mince makes the best scotch eggs!

INGREDIENTS:
12 eggs – makes 10 scotch eggs,
10 eggs for the centers,
2 Eggs for the outside coating,
Crushed garlic,
Salt,
Pepper,
1 kg Beef mince,
1 large brown onion,
Rice Bran oil,
Quinoa flakes (or rolled oats or bread crumbs).

Some baking or grease proof paper.

METHOD:

Hard Boil 10 eggs in a large saucepan.
Once the eggs are cooked pour out the hot water and cover and cool the eggs using cold water.
Once the eggs are cool remove the eggshell and put the eggs to one side.

Turn on your oven to preheat at 180o degrees Celsius.

Put into a large mixing bowl
1 kg of beef mince .
1 large brown onion, peel & grate your onion into the mixing bowl using a cheese grater,
Add 1-2 tablespoons of crushed garlic,
Add salt & pepper.
Mix the ingredients together well.

Now add 1 tablespoon of rice bran oil.
Lightly mix this in with the mince ingredients.

Put your beef mince mix onto a large flat surface.
We use a chopping board,

Square & even your beef mince mix.
Now divide your beef mince mix into 10 even portions.
We are making 10 eggs so we need 10 portions of mince.

Into a small mixing bowl break and whisk 2 eggs.
Pour about 1 cup of Quinoa flakes into a large bowl.
use rolled oats or bread crumbs if you want.
Prepare your assembly area,
Put a large piece of baking or grease proof paper on to a baking tray.
Move your whisked eggs and bowl of quinoa flakes near by to each other.

Begin to assemble your scotch eggs:
Take 1 portion of the beef mince mix.
Gently flatten your mince mix into a manageable size.
We do not want the mince so thin that it falls apart when you pick it up.

Pick up your beef mince portion in one hand and then place your boiled egg into the center.
Gently mold the mince to completely surround the boiled egg.
There should be no gaps in your mince surround and all the joins should be gently pressed together.

Place the scotch egg into your bowl of whisked egg.
Using soup spoons completely cover the scotch egg in a thin film of whisked egg.
Now remove the scotch egg from the whisked egg, drain and place onto your quinoa flakes.

Using first your spoon and then your fingers gently cover the whole of the scotch egg with the quinoa flakes.
Once covered place your scotch egg onto your baking paper on your baking tray.
Repeat until you have all your eggs assembled.
Once all your eggs are on the tray drizzle a little Rice Bran oil on the top of each egg.

Bake at 180o degrees Celsius for 20- 30 minutes, turning once.
When the scotch eggs are golden brown all over remove them from the oven.

Put your scotch eggs on to a cooling rack.
Cover with a clean tea towel until cool.
Once cool you can refrigerate.
