Beef salad – fusion

This Beef Salad is loosely based on a Thai beef salad which is usually eaten with sticky white rice.
Due to our Irish roots we eat this meal on a bed of cold, diced roast potatoes.
To really enjoy the flavors make this as a hot & spicy meal.

INGREDIENTS:
Beef steak,
Red onion,
Coriander,
Basil,
Lime juice,
Fish sauce,
Chili’s,
garlic.

Cold roast potatoes.
Roast some potatoes the night before and keep them in the fridge. Roasted potatoes will keep for about a week in the fridge; when kept in an air tight container. We like to snack on cold potatoes due to the research surrounding the lower GI properties of cold potatoes.

METHOD:
Cut your red onion in half, then finely slice your red onion.
Make the slices as fine as you can.
Put your red onion slices into a medium sized mixing bowl.

Fairly finely chop your Chili add to your red onion.

Add the juice of a fresh Lime, we also like to add a good squeze of lime juice.
Add about 2-3 tablespoons of fish sauce.

Next roughly chop your garlic, basil and coriander.
Add them all into your mixing bowl.

Mix well to ensure all the juices and flavors combine.
Cover with cling wrap.

In a frying pan pour some rice bran oil. Rice bran oil has a high smoke point.

Prepare your beef steak.
Sear the outside of your steak in your hot frying pan.
Remove from the heat and let the meat rest.
Slice your meat into long skinny strips.
The meat should be cooked on the outside and bleu on the inside.

Add your steak to your onion & other ingredients and mix together.
Letting this sit for a while will increase the flavor.
Serve on a bed of cold, diced roast potatoes
