The Multi-Kai cooker.

Traditionally Maori from Aotearoa (New Zealand) would cook using a method called “Hangi”. A hangi involved digging a pit in the ground, building a fire either in the pit or beside the pit. Rocks would then be added to the fire and heated. These would be put into the pit and food placed on top in flax baskets, the food was then covered and the pit was refilled and left to cook. When the pit was reopened several hours later the food would be cooked.

This method was reinvented for modern New Zealander’s using modern materials.

The Multi-Kai cooker is a great way to cook for groups of people.

INGREDIENTS:

Fresh veges enough to feed how many people you have.

Meat, Frozen chickens, Pork, Cooked Ham, Venison, Beef is also good.

METHOD:

First prepare your cooker, attach the gas, light the fire and make sure the bottom surface is nice and clean after your last cook-up.

Tip:
A common method is to add a small amount of Manuka wood chips to the bottom plate, you put the lid on and wait for the wood chips to start smoking, then cover the wood chips with an amount of water before you add your meat baskets. This will give your food a delicious Manuka wood smoked flavor.

Line the bottom tray with cabbage leaves.

Then put your meat on the bottom tray, on top of your cabbage leaves.
We cooked our Chickens on this occasion from frozen.
Put the second basket on top of the bottom basket and add the outside cover.

Put the lid on the kai cooker and start cooking.
You will notice a small amount of steam escaping.

During cooking add water to steam the food inside.

I took my first photo at 2:37 PM and it was dished on the plate at 6:44 PM.
(So 4 hours to cook)

We added water twice, the first time at 3:18 PM,
We added the vegetables at 4:50pm, we did not prick the vegetables (suggested you can),
and the second smaller amount of water immediately after at 4:51 PM.

After a time, check if you food is ready, we use a knife to prick the food.
When you prick your chicken the fluid should run clear and blood free.
Your vegetables should be soft.

Cut up the Chicken and in this case Ham & venison,

This is better than a Hangi in the disposable loaf tins from the Hangi take-away caravans — but only because its healthier.
