Dumplings or dough-balls.

These are so tasty & a perfect addition to any stew.
These take about (less) than 10 minutes to cook.
Make them on top of your stew just before you serve.

INGREDIENTS:
1 & 1/2 cups of Flour,
2 teaspoons of baking powder,
100 grams of Olivani (or Butter, Butter is better)
A good grind of Natural sea salt (or a good pinch of salt),
Some mixed herbs,
A splash of milk.

METHOD:
Sieve into a large mixing bowl:
1 & 1/2 cups of flour & 2 teaspoons of baking powder,
Add a good grind of sea salt (or pinch of salt),and a good shake of mixed herbs,

Weigh out 100 grams of Olivani (or butter, butter is better),
Add the Olivani to your dry ingredients,

Crumb the Olivani and dry ingredients together.
Keep crumbing until you have coarse flour that looks like bread crumbs.

Add a splash of milk.
NB it is better to add less milk than needed.
You can always add a little more later.

We want a dough, quite sticky and thick.

Mix well.
Once the flour and milk is mixed and you have a nice dough consistency.
Take a small spoonful and roll into a ball.
Add the balls one at a time on top of your stew.
Add as many as you like (3-4 per person).
The dumplings will expand and fill out across the top of the stew as they cook.

Once you have enough put the lid on and cook for 10 minutes.

Test one to make sure they are nicely cooked you can use a cake needle.
Insert the cake needle into one dumpling and if the needle comes out clean they are ready.

Add a few with each plate of stew.
A New Zealand favorite.
