Fish Smoking
Make your own Smoked fish in just 20 minutes.
Eat when freshly smoked or keep it in the fridge for 2-3 days. Smoked fish is great with a salad, on bread or crackers.

You will need to buy a fish smoker from your local hardware store. Get a small bag of wood chips at the same time (Manuka adds a nice flavor).

INGREDIENTS:

A nice piece of Fish.
Salmon is always popular.

METHOD:
It pays to prepare your area in advance.
Make sure you fish smoke will sit flat and is not going to cause heat damage to where you have located it.
Fill a small fire-proof container with methylated spirit.
Put your methylated spirit in the place you will be smoking, we will not move this again.

Add a small amount of wood chips to the bottom of your smoker,
You wont need too much wood chips, work on about a 2:1 ratio. 2 parts wood chips to 1 part of fish.

Place your cooking tray on top of the wood chips and place your piece of fish in the middle on top of everything.
Put your lid on your fish smoker.

Light your methylated spirit and place your smoker on top,
with the wood chips over the center of the source of heat.

While the fish smokes you will see a small amount of smoke escaping.

It takes just about 20 minutes for perfectly smoked fish.

There is nothing like freshly smoked fish.
