
A deliciously simple way to cook Paua.
Fresh is best.
This is our favorite way to eat Paua,
If you have enough Paua the bread is a not required, just eat paua, cooked off the plate!
INGREDIENTS:
Paua,
Garlic,
Ginger,
Butter,
Coriander.
METHOD:
Go and get some Paua, Shuck and gut it.
We were lucky enough to get given this Paua, so it was already gutted, smashed & Frozen for 1 day.
If you are going to freeze Paua you need to give it 1 good hard whack with a heavy flat object before you freeze it, use a skillet or similar object. This releases the muscle and breaks the cells so when you unfreeze the Paua it is in good condition.
Peel and chop some ginger,
Put a good knob of butter in a frying pan,
Add your garlic and ginger,
Slice your Paua,
I like my Paua sliced a little thicker, you can slice Paua fine as you like, we aim for about 3-5 millimetres thick. Like you would slice potato for a potato bake or dauphinoise.
Once the butter is melted, move it gently around with a fork,
Paua cooks quickly, turn it over and cook both sides,
The edges curl a little when the Paua is cooked.
Lightly butter a piece of bread,
Put some Paua on top with a sprig of coriander,
Hold the coriander on top and get a good bite!
