How to make marshmallow.

Caution: not a health food.
Try this fun recipe and make your own marshmallow.

Marshmallow goes well in hot chocolate & coffee.

INGREDIENTS:
1 cup of sugar,
1 tablespoon of Gelatine,
1 teaspoon of Vanilla essence
To dust:
Some icing sugar, you can also use chopped nuts & desiccated coconut.

METHOD.
Make some Gelatine,
Put 1/2 a cup if water into a bowl, add 2 tablespoon of Gelatine and stir.

Stir and Leave the Gelatine to set.

In a separate Pot,

Add 2 Cups of sugar and 1 cup of water.
Put on the stove on a low heat & stir until the sugar is dissolved.

This takes a little while,
N.B. DO NOT LET THE SUGAR/ WATER BOIL!

once the sugar is disolved we can add the Gelatine

Now we need to add the Gelatine but first we need to liquidize the Gelatine.
To do this in a new Pot add a good amount of hot water,
Put the bowl with the Gelatine into the bowl with the hot water (like a double boiler).

Soon the Gelatine will start melt and become liquid again.
Break it up with a spoon as it helps to speed up the melting process.

When the Gelatine is liquid, pour it into the hot sugar water and stir it together.

Turn up the heat and stir until boiling.

Once your mix starts to boil, reduce the heat a little and simmer for about 10 minutes.

Remove from the heat and put the pot on a bread board until cool.

Using a whisk or an egg beater,
Beat until the liquid turns white and thickens.


Add 1 teaspoon of vanilla essence and beat to combine.

Grease proof a large dish,
We used a roasting dish and a non stick roasting liner.
NB. Marshmallow is sticky.

Now pop it in the fridge to cool and set.

Once set we get to the hard part, cutting it in to squares, because marshmallow is sticky.
The good thing about using the roasting liners is it’s easy to get the marshmallow out of the dish.

Put a dusting of icing sugar on the bench and put your marshmallow on to it.
Turn your marshmallow over onto the icing sugar so the top is not sticky.

Add a small amount of icing sugar to the top, just to stop the stickiness.
You can pick up the marshmallow and put it on a cutting board.

Using a sharp knife, cut the marshmallow into squares.

Put the marshmallow squares into a bowl with some icing sugar toss to dust the marshmallow squares.
You can also use nuts and coconut.
