Flour’d Whitebait.
New Zealand’s seasonal treat.

Whitebait patty sandwich’s are good but if you have whitebait try this.
This recipe makes very light Flour’d Whitebait.
250 grams of Whitebait will make 4-6 appetizers.

INGREDIENTS:
Whitebait 250 grams,
A measure of flour,
Salt & Pepper.

METHOD:
Using a Colander, wash and drain your Whitebait,
Once drained of all water, add a measure of flour.
Toss the whitebait with the flour in the colander until all the whitebait are lightly & evenly floured.

In a frying pan add a small amount of butter.
Add your flour’d whitebait in portions.
Cook until the whitebait are white (no longer translucent.

To server, place the cooked whitebait on top of a green salad.
Salt and pepper to taste.
Fresh Whitebait has a subtle taste so be cautious not to loose the flavor by over seasoning.
