Spaghetti Bolognese.
Try this vegetable Spaghetti Bolognese!
A variation of the traditional meat sauce, this Spaghetti Bolognese is rich with roughly chopped vegetables & spinach.
Providing a more balanced meal and taste sensation.

This will feed 5-6 adults.
INGREDIENTS:
1 can of chopped tomatoes,
1/4 – 1/2 jar of a pasta sauce (not essential but helps build flavor),
Crushed garlic,
4 large mushrooms,
2 brown onion,
1 red capsicum,
A sprig of rosemary
A handful of basil,
A good quantity of spinach,
1 kg prime beef mince (low fat),
Prosciutto is Optional,
1 packet of noodles (we used Delamine fresh pasta, angel hair noodles)
Parmesan cheese,
Salt & pepper.
Start by preparing your onion and Prosciutto.
Finely chop 2 onions.
Pull the Prosciutto apart into rough sized pieces.
Put a frying pan with some oil on high.
Starting from a cold frying pan, sauté your onion and Prosciutto with a good teaspoon of crushed garlic,
Sauté starting with a cold pan,
Roughly chop a sprig of rosemary & add it to the pan,
Your onion will be starting to get soft,
and your frying pan should be getting hot now,
Add your mince and break it apart using your wooden spoon,
Stir occasionally and brown the mince while you prepare your vegetables,
Slice you mushroom and red capsicum,
When your mince is browned,
Add the chopped mushrooms and capsicum,
Stir a little into the mince.
Add your can of chopped tomato,
Add about 1/2 your jar of pasta sauce,
Stir the sauces together,
Stir occasionally and bring the sauce to a gentle simmer,
Roughly chop your leafy vegetables,
Add the leafy vegetable to the frying pan and stir into the mince,
Cover with a lid and leave to simmer,
Put a pot of water on to boil for the spaghetti noodles,
Use hot water from the jug,
When the water is on a rolling boil

Add your noodles,
Move the noodles around the pot a little to ensure they separate and cook evenly,
Cover with a pot lid and leave to cook,
Keep an eye on the noodles & turn the heat down a little if they start to boil over,
Your spinach and leafy vegetables should be cooked by now,
Add a handful of basil to the mince,
Cover your sauce with a pot lid and leave to simmer,
Keep an eye on your noodles,
Turn the heat down a little if the pot starts to boil over,
When your noodles are cooked drain them in a colander,
We like to rinse the noodles with a jug of boiling hot water,
A vegetable rich and tasty meal!
Place your spaghetti noodles in a bowl, cover with your sauce,
Serve with a little Parmesan cheese.
