Tomato, Leek and Onion Soup Medley.
You will be hard pressed to find a more delicious vegetable soup!
INGREDIENTS:
1 large leek (we used 2 small),
1 onion,
4 tomato,
6 cloves of garlic,
1 can tined tomato,
1 teaspoon Coriander,
1 teaspoon Cumin seeds,
1 teaspoon Paprika.
The above makes about 6 servings.
METHOD:
First heat a drop of oil in a pot.
Used a medium heat (about 3-4 on the oven top),
Chop you onion into small even pieces,
Put your onion into the pot and begin to Sauté,
Prepare the leek,
In this recipe we just use the stem of the leek,
Cut away the top leaves of the leak and keep this for another meal.
Cut your leek stem in half and wash it,
Be sure to get the dirt out from all the layers.
Chop your leek stem into pieces.
The pieces should be uniform in size and about 1 cm thick.
Pop the Leek in with the onion, Sauté
Peel and roughly chop 6 cloves of garlic,
Add the garlic to the pot and continue to Sauté,
While it’s cooking,
Chop your 4 tomato.
Cut the tomato in half and quarter each half, then cut the quarters in half.
This should give you nice sized half wedges,
Add your chopped tomato to the medley,
Give it a good stir,
Now add your tin of tomato,
We used Budget (chopped) tomatoes,
Give the medley a good stir,
Add 1 teaspoon of Caraway seeds,
& 1 teaspoon of ground Tumeric,
& 1 teaspoon of ground Paprika,
Stir the spices through,
Add 3 cups of boiling water,
Stir and bring to the boil, then reduce the heat and simmer for about 20 minutes,
Simmer for about 20 minutes,
Serve and eat!
The most delicious vegetable soup!
