INGREDIENTS:
Flaky Puff Pastry sheets (2 sheets per pie),
Eggs (about 9 per pie),
Bacon.

Butter to grease your pie tins with, or use non-stick baking dishes.

You need a lot of eggs we use about 9 in each pie.
Make two pies at once for convenience.

METHOD:

Preheat your oven to 200o degrees Celsius.

Grease your pie dish with a little butter and thaw your pasty sheets.
Granny lay the frozen pastry sheet on top of the greased dish and as the pastry thawed it naturally sank into the pie dish.

When your pastry is thawed, press it into the pie dish to make the base of the pie.

Do not trim off any pastry at this stage we will finish the pie later.

Now add a layer of bacon.

Break and add your eggs.

Once your eggs are in the pie dish you should break the yokes.
This gives you a better finish to your pie once cooked and served.

Add a final layer of bacon.
2 pieces of bacon is enough.

Now use a little water and wet the edges of the pastry.
This will allow the top sheet of pastry, the lid, to stick.

Now put your top sheet of pastry on as a lid, and press it around the edges.
This seals the pie and makes the lid stay on.

Using a sharp knife, cut a few slits in the top of the pie.
This will let the steam escape and stop the pie ‘exploding’ upwards.
Cut off the excess pastry from around the edges of the pie dish.

Pop your pies into your preheated oven.
Cook for about 40 minutes at 200o degrees Celsius.

When they are looking golden brown check to make sure they are cooked.
Just put your finger on the top and give a little press down.
Firm is good, squishy needs a little more cooking.

Use a knife to loosen the edges of the pie.
Cut and serve.

Gently work a spatula under the pie and lift your pie from the dish.
