Rolled Oat Biscuits.
A healthy alternative to my Auntie Bell’s Traditional Rolled Oats Biscuits which have been a family favorite generations.
The oats and ginger in these cookies really creates a flavor unlike any other cookie.
These cookies freeze well.

INGREDIENTS:
8 ounces of butter
6 ounces of sugar
1 cup Wholemeal Flour (Wholemeal Spelt flour)
2 & 1/2 cups of rolled oats
1 tsp Baking soda
1 Packet of crystallized ginger
4 Tablespoons of cold water
1/3 cup of oat bran
1/3 cup of coconut thread.

METHOD:
Using your kitchen whiz.
Cream 8 ounces of butter & 6 ounces of sugar together until light in color & fluffy.
Butter from the fridge is hard & takes time to soften.
To speed up the process place the butter & sugar into a bowl. Put the bowl into a sink with hot water, this will start the creaming process.

Cream butter & sugar till light in colour & fluffy.

Chop 1 packet of crystallized ginger into smallish pieces.

Add all the ingredients into your creamed butter and mix well using your kitchen whiz.

If the mixture is a bit sticky just add a little more flour.
You want a mix that is stuck together but still quite dry.

Drop the mixture onto a floured board (or bench) …cut in two halves as this makes 2 full trays of biscuits.

Roll out and cut into biscuit shapes.
Use an upside down glass to cut out a nice biscuit size & shape.

Place on a well greased tray.

Bake at 180o degrees Celsius for approximately 15 minutes.
Keep your eye on your cookies and if your biscuits start to get past a nice shade of brown turn down the heat on the oven to 150 o degrees Celsius .

Once cooked, let them cool.
They may be joined at the edges but will easily separate.
