1 teaspoon of white wine vinegar,
2 teaspoons of vanilla essence,
3 teaspoons of cold water.

METHOD:

Preheat your oven to 150o Celsius,

We do not use the egg yolks in pavlova.

Now beat your egg whites until stiff,

When they are stiff,

Add 3 teaspoons of cold water and beat a little to mix,

While keeping your mixer on a low speed, slowly add your cup of icing sugar,

Sprinkle in a little icing sugar,
Then a little more, then a little more…

Keeping the mixer on a low speed,

This smooth, creamy, delicious looking pavlova mix is good enough to eat,

When you have soft peak consistency, it’s ready,

Put a piece of baking paper on a tray,

Use a rubber spoon and scoop the Pavlova mix onto the center of the tray,

Without squashing all the air out of your pavlova mix,
Use your rubber spoon to spread the mix and shape the edges,

In your preheated oven at 150o degrees Celsius,
Bake your pavlova until golden brown (about 45 minutes),

Once golden brown, remove the pavlova from the oven and leave the Pavlova sitting to cool.
If you let the pavlova cool in the turned off oven your pavlova will keep it’s size.
Once cool you can decorate with Cream and fruit.

Add the grated chocolate into the cream (this will give a nice sweetness to the cream,
Spread your cream and add your fruit,

Finely chop a second piece of chocolate and sprinkle on top,
