Chocolate Lamingtons.
A simple way to make Chocolate Lamingtons.
We love this delicious sponge based treat.
So simple to make & Lamingtons freeze very well so you can keep a supply handy in case visitors come to call.

INGREDIENTS:
A Piece of sponge.
A sponge about 19 cm square will make 9 nice sized lamingtons.
You can use homemade or shop bought sponge, however the sponge should be at least 1 day old.

2 cups of desiccated coconut approximately.

For the chocolate icing:
2 talbespoons of cocoa,
6 tablespoons of boiling water,
25 grams of butter,
2 & 1/4 cups of icing sugar
1/4 teaspoon of vanilla essence

METHOD:
In a mixing bowl dissolve 2 tablespoons of cocoa in 6 tablespoons of boiling water.
Microwave 25 grams of butter in the microwave for about 20 seconds. The butter should be soft but not runny.
Add your butter to the cocoa mixture.
Using a fork mix in the butter to your runny cocoa.

Into a large mixing bowl.
Add 1/4 of a teaspoon of vanilla essence to the cocoa mixture. We use ground vanilla pods.
Sift 2 & 1/4 cups of icing sugar in to your large bowl.

Pour your cocoa mixture over your icing sugar and stir well to combine.
Put your icing aside for now.

Cut your sponge into 9 equal sized pieces.
Pour out about 2 cups of desiccated coconut onto a large dish.

Prepare your assembly line… your sponge on the left, chocolate icing in the middle & desiccated coconut to your right.
Make sure you have a cake rack ready to put your finished lamingtons on top of.

Dip a piece of the sponge one at a time into the warm chocolate icing.
Use forks to keep your hands clean.

Thoroughly coat your piece of sponge on all sides.

Transfer your piece of chocolate coated sponge into the large dish of coconut.
Gently turn the sponge using your forks and cover the chocolate all over with the coconut…
This is a bit messy, once you have your initial coconut sticking to the chocolate icing you need to use your hands to complete the covering.
This is well worth the little bit of extra trouble.

Transfer your chocolate lamington to a cake rack to allow to dry and set.

Once you have a full cake rack, place your lamingtons in to your fridge to set.

Once set we like to cut and fill with cream & raspberry jam.
