Venison roasted with peaches & chili.
A fantastic way to roast Venison.
When you are boning your leg of Venison you will find some nice muscles, which when kept whole make fantastic Roasts.
This is one way to prepare a venison roast, we served our in pita bread with salad… lush!

INGREDIENTS:
Venison roast,
1 can of sliced peaches,
A handful of fresh chili,

Serve with:
Pita bread
Green salad with feta cheese.

METHOD:
Pre-heat your oven to 160o degrees Celsius.

Clean your venison and remove any white sinew from the top of your meat.

Put your Venison into an oven bag, in an oven safe dish.

Pour 1 can of tinned peaches over the top.

Roughly chop a handful of green chili.
Put your chopped chili on top of your venison.

Tie your roasting bag and pop into a preheated oven at 160o degrees Celsius.
We do not use the tie that comes with the roasting bag, we twist the bag end and tuck the opening under the bag.
This closes the bag and allows us to open and check the meat with out damaging the oven bag. In case we need to put the meat back after checking.

Venison cooks quickly and we do not want to over cook the meat.
Check you meat after 20 minutes and you should be ready to remove from the oven.

Rest the meat for 10 minutes while you lightly toast your pita bread pockets.

Add an amount of salad to the bottom of your pita pocket.
Add some slices of Venison, some peaches & juice and a sprinkle of your cooked chili.
