The Whitebaiters Whitebait patties.
Traditional white bait patties made the West coasters way just like at the whitebait stand.
You can not make easier whitebait patties than this.
INGREDIENTS:
2 eggs,
500 grams of whitebait,
Bread,
Olivani,
non-sponsored recommendation
We like to use GLAD® Snap Lock® Resealable Bags.
METHOD:
Preheat your hotplate.
We are using a Bar-be-que but a heavy, cast iron frying pan will work.
Split your white bait into two even portions.
Put one portion of whitebait into a snap lock bag.
Break in 1 egg.
Use a fork and gently mix through the egg.
Seal the bag and move the contents around inside until you are sure all the whitebait are coated in egg.
Add a good dollop of olivani to the hotplate.
Onto your hotplate:
Pour patty sized portions of your whitbait & egg mix directly from the snap lock bag.
You can see the Whitebait cooking.
The translucent whitebait turns white as it cooks.
Cooking the whitebait will not take long.
Do not over cook the whitebait.
Turn the patties over to brown both sides.
Serve with bread & butter, salt & pepper.
