Summer-time Jelly drink.

A less sweet version of Juice with Nata de Coco or Pearl tea.
Try this Asian-inspired refreshing & not too sweet summer-time drink.
The key to this drink is to use a non-sweetened juice or herbal tea.

Serve chilled during the hot summer months.
You may like to make everything the day before and put the drinks together on the day.

INGREDIENTS:
Jelly crystals – 2 flavours,
Gelatine – 1 packet 125 grams,

Herbal tea,
Try Wild-berry or green tea.

You will need:
Thick drinking straws.
2 large flat dishes, we are using roasting & casserole dishes.
Room in your refrigerator to put your large flat dishes while your jelly set.

METHOD:

Make a Gelatine Jelly.
In a large flat dish sprinkle evenly over the bottom of the dish half of 1 packet of Gelatine.
In your second large flat dish sprinkle the other half of the packet of gelatine.

Now sprinkle 1 flavored jelly packet into each dish.

Add 2 cups of boiling water into each dish, dissolve all the jelly and gelatine.
We can use 2 cups of boiling water (1 cup more than for jelly) because the Gelatine will set the jelly thicker than before.

Set the jelly aside and let it cool first before putting it into the fridge.

Pop the Jelly into the fridge to finish setting.
We needed to be creative to get these both into the fridge.
Make sure they will not spill before they are set.

While your jelly sets make your herbal tea.
We do not add any sugar to the drink and the jelly is only a little sweet so make a tea flavour to suit your drinkers.

You need to chill this drink once made. Add extra ice to the drink to speed up the process.

Once your jelly is set, cut into small cubes.
because of the added Gelatine we have quite a solid jelly.

Layer your jelly into the bottom of drinking glasses.

Serve with your cold herbal tea and a thick straw.
