Baked ham.

Baked ham is generally a meal served for Christmas. Once baked you can keep this in the fridge for a few weeks, covered with a moist cloth.
Eat with salads, in sandwiches or straight off the bone.

INGREDIENTS:
1 ham on the bone,
2 packets of glaced red cherries,
2 tins of pinapple pieces,
1 jar of english breakfast marmilade,

You will need:
A couple of packets of wooden tooth-picks,
A clean tea-towel (muslin cloth or ham bag) to cover the ham in the fridge once cooked.
Apple cider vinegar to mix with water when moistening the cover for the ham.

METHOD:
Preheat your oven to bake at 175 o degrees Celsius.

The first thing we need to do is remove the skin/ rind from the ham.
Do thins by placing the ham in the oven and gently warming.
Once the ham is warm you will be able to peel the skin off the ham using a knife and you hands.
A thin layer of white fat will remain, that is expected.

Using your sharp knife, score a criss-cross diamond pattern across the whole of you ham.
You want to penetrate about 1/2 a centimeter deep into the ham.
This will let the marinade penetrate to the ham and provide a beautiful finish.

Open you can of pineapple pieces and drain the juice using a strainer into a container.
Put the pineapple pieces aside.

Into a large bowl add a large quantity of your marmalade (about 3/4’s of the jar). Gently heat the marmalade to room temperature (10-20 seconds in the microwave is sufficient).

Using a spoon to mix the marmalade, pour in small amounts of your pineapple juice. Continue until your marmalade is a consistency that can easily be spooned and spread on top of your ham.

Cover your ham with a thin layer of marmalade.
Be sure you glaze the end of your ham.
You will be able to tell when it is ready for the next step because the criss-cross diamond pattern pattern you scored into the ham will be clearly visible.

As you prepare your toothpicks place your ham into your pre-heated oven.
Let the ham gently heat and the marmalade will start to glaze.
Remove the ham and repeat adding another layer of marmalade.
Return to the oven and let the marmalade warm, we do not want the ham to cook yet.
Be sure to remove the ham before it starts to get too hot and begin cooking.

To prepare your toothpicks.
Skewer 1 cherry and 1 piece of pineapple onto each toothpick.

We are going to prick them into the ham pineapple side down.
Place them ready to use onto a plate.

Remove your twice glaced ham from the oven.

In the center of each of the criss-cross diamonds firmly insert one pineapple-cherry toothpick.

You will end up with a beautifully decorated ham.

Bake for a further 10-15 minutes, then add another layer of glaze.

Be sure you glaze the end of your ham.

Finish with a further 10-15 minutes baking.

Remove from the oven and let cool.

prepare your cover.
Add a little apple cider vinegar to a bowl of water and stir.
Soak your tea-towel or alternative ham cover.
Wring out any excess liquid, so the cover is moist but not dripping wet.
