Quinoa porridge

This Quinoa porridge is delicious, a really tasty alternative to our traditional rolled oats porridge.
We first had this served in a take-away cup from a street food stall in South America. Our friend and guide explained that this was a traditional Inka food and gave us the recipe to prepare the quinoa.

We are using local ingredients & our variation tastes as good.
Quinoa is sold as a ‘super-food’ and is great on a budget.
Make a large pot full and this will keep well; in airtight containers; all week in the fridge.
Simply take a serving in the morning, eat it cold or pop a cup full into your microwave for a great start to any cold morning.

INGREDIENTS:

Honey 2 tblspn,
Cloves x 5,
Cinnamon sticks x 4,
Granny smith apples x 3,
Crushed pineapple 1 x 375 gram tin,
Pear x 1,
Quinoa 1 cup,

This is sold as a heavily sweetened drink and we have substituted a little honey for a lot of sugar.

REQUIRED:
You will need a (very) large pot and a colanders or sieve.
It is nice to have a hand held blender.

METHOD:
Peel your apples & pear.
Quarter and core your fruit.

Put your fruit in a bowl and set aside for later.
At any time you should chop your fruit into smaller pieces.
Keep your fruit peeling ready.

Put 2 large tablespoons of honey into a (very) large pot.
Heat and caramelize your honey… keep stiring your honey and do not let the honey burn.

Add 2-3 liters of boiling water, 5 cloves, 4 cinnamon sticks & your fruit peelings.
The amount of water you add will result in how runny the quinoa is.
3 liters will be drinkable – closer to 2 liters will be a thinker porridge.

Put the pot lid on and cook simmering for 20 minutes.

Strain your juice to remove the fruit peelings, cloves and cinnamon sticks.

Return your strained juice to the pot.

Measure out 1 cup of Quinoa.

Rinse the Quinoa, this can be a little tricky… try not to loose too much down the sink. We put the qunioa into a large bowl and add water, then move about with our hands.
Then carefully pour off the water leaving the quinoa at the bottom of the bowl. The add your rinsed quinoa to the pot.
When you add the quinoa to the pot, use a cup & take some liquid out from the pot.
Pour this liquid into the rinse the bowl and swish around then pour back into the pot get all the quinoa.

Add your tin of crushed pineapple & your chopped fruit.

Put the pot lid on and cook simmering for 30 minutes.
The quinoa will thicken quite quickly.
You will want to stir the quinoa occasionally so it does not stick to the bottom of the pot.
Do not let it burn.

Remove from the heat, use a hand held blender to blend in the fruit or use a wooden spoon and a colander.

Let the qunioa cool on the bench then keep in air tight containers in the fridge.
