Nasi Lemak.

One of my favorite foods to eat when in Malaysia is Nasi Lemak & nobody makes Nasi Lemak like the Malaysians.
I remember thinking the first time I ate Nasi Lemak, “that looks a little plain” but the flavors are so good together.
This is our more authentic Nasi Lemak.

Rice,
Coconut cream,
Anchovies,
Shrimp paste,
1/2 and egg (boiled),
Panda leaves.
we found our Panda leaves frozen in the Tai Ping Trading Company on Beach Road, Auckland CBD.

REQUIRED:
Slow cooker or crock pot.

METHOD:
Slow cook your rice in coconut milk…
Add 2 cups of rice, 2 cups of water, 1 can of coconut cream, a good pinch of salt and 1 panda leaf tied into a knot

Make sure you push your panda leaf down into the liquid, you can do this a couple of times while it is cooking too.
Give the rice a little stir then pop the lid on to cook.
Every 30-40 minutes give the rice a little stir. We want to cook until all the liquid is gone but the rice is still moist.
Once the liquid is gone, remove the panda leaf and fluff the rice.
If the rice is a little under cooked, pop the slow cooker onto warm and leave the rice sitting for a while (10-20 minutes) and the rice will be beautiful.

While the rice is cooking boil a couple of eggs.
Peel and let cool before cutting in half.
Each serving of Nasi Lemak comes with 1/2 of a boiled egg.

You need either a small bowl or similar to plate the rice.
We used a small tin-foil pie tin. The rice should be about the amount to fill the palm of your hand.

Add 1 serving of rice, a teaspoon of shrimp paste, some anchovies and half a boiled egg to each plate.
