Nasi Lemak.

One of my favorite foods to eat when in Malaysia is Nasi Lemak & nobody makes Nasi Lemak like the Malaysians.
I remember thinking the first time I ate Nasi Lemak, “that looks a little plain” but the flavors are so good together.
This is our first attempt, an honest attempt to recreate the delicious flavors using locally sourced ingredients.

INGREDIENTS:
Rice,
Coconut cream,
Anchovies,
1/2 and egg (boiled)
I added some stuffed olives and they were nice.

REQUIRED:
Slow cooker or crock pot.

METHOD:
You need to slow cook your rice in coconut milk.
This took about 2.5 hours for 1 cup of rice.

While the rice is cooking boil a couple of eggs.
Peel and let cool before cutting in half.
Each serving of Nasi Lemak comes with 1/2 of a boiled egg.

Add 1 cup of rice, 1 can of coconut cream to your slow cooker.
Add 1/2 a cup of boiling water and turn the slow cooker on low.
Give the rice a little stir then pop the lid on to cook.

Every 30-40 minutes give the rice a little stir. We want to cook until all the liquid is gone but the rice is still moist.

You need either a small bowl or similar to plate the rice.
We used a small tinfoil pie tin. The rice should be about the amount to fill the palm of your hand.

I was able to find these Flott Anchovies fillets.
The ones in Malaysia were almost dried and more delicious.

Each plate gets, rice, anchovie fillets, half a boiled egg and a chili based sauce.
We used Ginger and chilli but see if you can find a Nasi Lemak sauce.
1/2 a dozen stuffed olives were a nice addition.
