Basil Pesto.

Darling shared her homemade & tasty recipe for Basil Pesto.
Basil Pesto is a great topping, eat with Cheese & dips, toast or crackers.

This is super simple and best to eat after a couple of days in the fridge.

INGREDIENTS:
1/3rd cup of oil,
1/3rd cup of cashew nuts,
A large handful of fresh basil leaves,
1 teaspoon of crushed garlic,
Salt and Pepper to taste.

Required:
We used our Nutribullet but any kind of food processor or kitchen whiz will do.

METHOD:
Add 1/3rd cup of cashew nuts to the bottom of your Nutribullet,
The nuts go in first because they are the heaviest and we do not want to mush them completely.

Add your fresh basil leaves on top.
Pour over 1/3rd cup of olive oil, and 1 teaspoon of crushed garlic.

Salt and pepper (remembering that the roasted salted cashews have salt in them already).
Blend until you get a consistency with the basil leaves blended and the cashew nuts still a little chunky.

Spoon the pesto in to a container and put into the fridge.
This tastes better after a couple of days in the fridge.

Eat on your morning toast or as a condiment with cheeses and crackers.
